Casey is Hub's little brother. We sure do love that kid! Well, he is not really a kid, he is actually a grown man who fights fires and loves sweet Maddi, his new bride! Casey and Maddi's southern barn style wedding was last month. It was adorbs, like them, and the reception was incredibly sweet, in more ways than one!
Let me let you in on a little secret.
Even if little boys grow up to be strong husbands, they don't necessarily outgrow cookie time! Just because Hub's little brother is married now doesn't mean milk and cookies are not still an essential part of every day living for him. In the south that's just how our men roll. So along with the bride's beautiful cake and the cheese and beef jerky, Casey served a huge platter of chocolate chip cookies and big frosty pitchers of ice cold beer milk!
Let's be honest, there's a bit of kid in all of us when it comes to milk and cookies, right? Becoming a Mr. or Mrs. doesn't change that. So I politely helped myself to one of Casey's wedding day chocolate chippers ...or two. Okay, I had four. Yep, sure did! And I had four more the other night when I whipped up the recipe in my very own kitchen! Can you believe the wedding caterer just ponied up this recipe? I mean, really, I was shocked! Martha would have never done that! But who needs Martha? We got this.
And since the caterer didn't share the name of the recipe with me, I named my cookies in honor of Casey and Maddi. It's just the right thing to do.
So here is the recipe for the fanciest cookie you will find at our family weddings.

MARRY MADDIE COOKIES
Preheat oven to 350º
Ingredients:
2 eggs
2 sticks unsalted butter at room
temp
1 tsp vanilla
1 cup white sugar
1 cup brown sugar
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
2 cups old fashion oats
1 cup nuts (I use mixture of pecans & walnuts)
1 cup chocolate chips (I use semi sweet)
Instructions:
In a small bowl toss together flour, salt, and baking powder. Set aside.
In a large bowl whip with a whisk or beaters the butter, sugars, vanilla, and 2 eggs.
Combine the flour mix into the sugary mix by hand. Then add oats, nuts and chocolate chips, stirring all together until incorporated.
Spoon onto baking sheet at least 2 inches apart.
Bake approx 12 minutes or until golden around edges.
*dough can also be frozen
